Step by Step Method

Step 1

Preheat oven to 400 degrees F.

Step 2

In a measuring cup break the eggs .

Step 3

In a cast iron skillet on medium heat melt the butter and then add the ham and leeks (or green onions) and cook stirring for a few minutes until the leeks softens.

Step 4

Add the eggs to the skillet, spacing them apart. Drizzle the cream around the eggs and then sprinkle with the cheese and herbs.

Step 5

Transfer skillet to oven and bake for 5-10 minutes or until whites are set and yolks still a bit runny; season to taste with the salt and pepper. Cut into wedges and serve with toast if desired.

I've never had (or made) eggs this way before so I was really curious about them. I'm so glad that I tried them. I loved them. I made 1 serving with 2 eggs. It took about 12 minutes to cook them but I might have added more cream for just 1 serving in my small baking dish. These were really creamy, good, and filling. Thanks for sharing this great keeper, Ellie.
