Ingredients

The ingredients are:
  • 6 eggs
  • 1 tablespoon butter
  • 1/2 cup ham, cooked
  • 1/4 cup leeks, sliced (or use green onions)
  • 1/2 cup heavy cream or half and half
  • 1/4 cup white cheddar cheese, shredded (or use your favorite cheese)
  • 2 tablespoons basil or your favorite herbs
  • Salt
  • Pepper
  • Bread, toasted, optional for serving

How to Make

  • Step 1: Preheat oven to 400 degrees F.

  • Step 2: In a measuring cup break the eggs .

  • Step 3: In a cast iron skillet on medium heat melt the butter and then add the ham and leeks (or green onions) and cook stirring for a few minutes until the leeks softens.

  • Step 4: Add the eggs to the skillet, spacing them apart. Drizzle the cream around the eggs and then sprinkle with the cheese and herbs.

  • Step 5: Transfer skillet to oven and bake for 5-10 minutes or until whites are set and yolks still a bit runny; season to taste with the salt and pepper. Cut into wedges and serve with toast if desired.
