Step 1: Preheat oven to 400 degrees F.
Step 2: In a measuring cup break the eggs .
Step 3: In a cast iron skillet on medium heat melt the butter and then add the ham and leeks (or green onions) and cook stirring for a few minutes until the leeks softens.
Step 4: Add the eggs to the skillet, spacing them apart. Drizzle the cream around the eggs and then sprinkle with the cheese and herbs.
Step 5: Transfer skillet to oven and bake for 5-10 minutes or until whites are set and yolks still a bit runny; season to taste with the salt and pepper. Cut into wedges and serve with toast if desired.
