Step 1
Combine mince, breadcrumbs, egg, onion and mint in a large bowl and season and then divide into 6 even portions and then shape each portion into a 12 cm patty and place on a plate.
Step 2
Cover the plastic wrap and place in the fridge for 30 minutes to rest.
Step 3
Meanwhile, combine cabbage, carrot, pine nuts, mayonnaise and mustard in a large bowl and season.
Step 4
Heat the barbecue grill or a chargrill pan on high and cook patties for 3 minutes each side or until cooked through and top with a blue cheese slice and cook for 1 minute or until cheese starts to melt.
Step 5
Transfer to a plate and add the apple to the grill and cook for 1 minute each side or until lightly charred.
Step 6
Cook the cut side of the rolls on grill for 1 minute for 1 minute or until lightly toasted and place on serving plates and top with coleslaw apple and patties and then sandwich with roll tops and serve immediately.
