"These are a lovely low-fat treat. I serve these with salsa sauce for dipping. I have made these with panko bread crumbs and regular bread crumbs and both are nice."

Step by Step Method

Step 1

Place a wire rack over a rimmed baking sheet and coat it with non-stick spray.

Step 2

Whisk together the eggs and mustard; set aside.

Step 3

Mix the spices and bread crumbs together in a shallow bowl.

Step 4

Dip the chicken strips in the mustard and egg mixture, then into the bread crumb mixture.

Step 5

Put the chicken strips onto the wire rack.

Step 6

Cook in a preheated 400 degree Fahrenheit oven for 20 to 25 minutes, until light brown and chicken is cook through.

Made these for supper tonight, mmm delicious, Don loved them , said they were the best i've made !! I used the panko bread crumbs which made a wonderful crunchy crust and i used chicken thighs which make for a deliciously juicy inside!! The cumin, chili and garlic powders were a great combination of flavours, didn't have any parsley so left it out, i don't think it was missed at all. I used dejon mustard with the egg and will definately be making these often, thanks for posting a keeper !!

Engrossed

Very tasty healthy way to make boneless skinless chicken breasts have some pizazz! I made it as directed with panko bread crumbs, defrosted chicken tenders, and sprinkled garlic salt over all. I wasn't sure if the 'hot mustard' was supposed to be powdered chinese style, or prepared, so finally decided on half coleman's dry, and half prepared yellow with great results. We did enjoy this served with salsa like you suggested. Hubby thought the coating would be good on shrimp too. Made for the Billboard recipe tag game.
