Step by Step Method

Step 1

Grate the zucchini and place in a colander; sprinkle with salt and let drain for 30 minutes; squeeze out moisture and pat with paper towels.

Step 2

Place the zucchini in a bowl and add the green and yellow onions, dill, parsley, cheese, eggs, flour and salt and pepper to taste; mix well.

Step 3

In a large sauté pan over medium-high heat, pour in oil to a depth of ¼ inch; when the oil is hot, drop the batter by heaping tablespoonfuls into the pan (or form into small patties), allow space in between fritters; fry for 2 minutes on the fist side, then turn to brown on the second side for about 3 minutes; using a slotted spatula transfer to paper towels or newspaper to drain; repeat with remaining batter.

Oh Pia, these are a wow! This zucchini lover found these fitters wonderfully delicious! Although I only had a bit of fresh dillthey were so so good. Have to admit I did add a dollop of sour cream just as I do on potato latkes! I foresee plenty of reruns in my future!

I made these yummy fritters for my New Year's Eve mini party. they were delightful, and a perfect way to ring in the new year. I love fritters so I knew I would like these by just looking at the ingredients. The feta added the right amount of salt to them. These would be good with other veggies as well. Made for Billboard tag.

Oh I see why you did not look for another version! These are gloriously wonderful! I did have to sub the fresh dill for dried, cilantro for the parsley, but I don't think that it changed it much. The feta is a great addition! Thank you for sharing as I have a plethora of zucchini to use.
