Step by Step Method
Step 1
Preheat oven to 375 degrees. Coat an 8x8-inch baking dish with non-stick cooking spray.
Step 2
Squeeze zucchini between paper towels to remove excess moisture.
Step 3
In a small skillet, heat oil; saute onion until tender.
Step 4
Transfer to a large bowl. Add zucchini and remaining ingredients except tomato sauce. Mix well.
Step 5
Pour into prepared baking dish. Spread tomato sauce evenly over top.
Step 6
Bake 30 minutes.
Step 7
Serve hot.
