Step by Step Method
Step 1
Rinse and dry zucchini blossoms.
Step 2
In a nonstick skillet over medium high heat heat 3 tablespoons oil; add blossoms and saute until they begin to brown in spots; turning often (only a few minutes); sprinkle with 1/4 teaspoon salt and 1/8 teaspoon pepper. Transfer to paper towels and blot off excess oil
Step 3
Place 4 bread slices on work surface; sprinkle 1/2 cup cheese on each slice. Top each with 5 blossoms; top with remaining 4 bread slices; press down to compact. Brush both sides of bread with oil.
Step 4
Using a panini grill, cook each sandwich until golden brown - 5-10 minutes.
