Ingredients

The ingredients are:
  • 3 ounces zucchini blossoms (stems removed, 20 blossoms)
  • 3 tablespoons olive oil
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon white pepper, ground
  • 8 ounces sliced bread (8 slices country style bread, 5 x 3 inch slices)
  • 2 cups fontina cheese, grated (8 ounces)

How to Make

  • Step 1: Rinse and dry zucchini blossoms.

  • Step 2: In a nonstick skillet over medium high heat heat 3 tablespoons oil; add blossoms and saute until they begin to brown in spots; turning often (only a few minutes); sprinkle with 1/4 teaspoon salt and 1/8 teaspoon pepper. Transfer to paper towels and blot off excess oil

  • Step 3: Place 4 bread slices on work surface; sprinkle 1/2 cup cheese on each slice. Top each with 5 blossoms; top with remaining 4 bread slices; press down to compact. Brush both sides of bread with oil.

  • Step 4: Using a panini grill, cook each sandwich until golden brown - 5-10 minutes.
