"A copycat recipe from a high end deli. The zucchini are small and tender and the oil is top drawer. It didn't say to add the juice but I think you could. I think this is an eyeball, add to your own taste recipe."

Step by Step Method

Step 1

Cook pasta in heavily salted boiling water until al dente.

Step 2

Drain.

Step 3

In a large bowl, combine the drained pasta, lemon zest, peas, cut zucchini, tomatoes, basil and Parmesan.

Drizzle olive oil over to coat and toss gently.

Step 5

The salad will keep up to 2 days, covered and refrigerated

Great combination of veggies with the pasta! I am so used to adding mayo to pasta salad, that I did that before I remembered it was supposed to be olive oil! It was yummy this way, too!
