Step 1

Combine the first 7 ingredients in a 2 1/2 quart baking dish; stir well, and set aside.

Step 2

Saute onion, garlic, and cumin in oil in a skillet until the onion is tender. Add to the chicken mixture, stirring well.

Step 3

Cover and bake at 350° for 50 minutes or until the chicken is done. Remove from the oven. Add hot sauce to taste; stir well.

Step 4

Sprinkle with cheese. Garnish, if desired.

We enjoyed chili cooked this way in the oven. We particularly liked the three combinations of cannellini, garbanzo, and white corn. However, after taking it out of the oven we found that it was a bit bland, so chili powder and additional cumin was added along with some chicken broth, simmering it for a bit on the stovetop. I also added the chicken breasts whole and then cut it up once chili was removed from the oven. Thank you, Breezer for sharing.
