Ingredients

The ingredients are:
  • 2 pounds chicken breast halves, boneless skinless (4 fillets, cut into 1 inch pieces)
  • 2 1/2 tablespoons chili powder
  • 1/2 tablespoon cumin, add more if you are a cumin fan
  • 15 ounces cannellini beans, drained (1 can)
  • 15 ounces garbanzo beans, drained (1 can)
  • 1 1/2 cups water
  • 11 ounces white corn, drained (1 can)
  • 8 ounces chopped green chiles, undrained (2 cans)
  • 24 grams bouillon cubes, chicken-flavored (2 cubes)
  • 1 yellow onion, chopped
  • 1 garlic clove, minced
  • 1 teaspoon cumin, ground
  • 1 tablespoon oil (vegetable oil)
  • Hot sauce, to taste
  • 1 cup Monterey Jack cheese, shredded (4 ounces)
  • Garnish
  • Fresh parsley sprigs

How to Make

  • Step 1: Combine the first 7 ingredients in a 2 1/2 quart baking dish; stir well, and set aside.

  • Step 2: Saute onion, garlic, and cumin in oil in a skillet until the onion is tender. Add to the chicken mixture, stirring well.

  • Step 3: Cover and bake at 350° for 50 minutes or until the chicken is done. Remove from the oven. Add hot sauce to taste; stir well.

  • Step 4: Sprinkle with cheese. Garnish, if desired.
