"This great-tasting appetizer always gets gobbled up in no time. I use fresh vine-ripened tomatoes and the sauce always turns out nice and thick after 8 to 10 minutes of simmering. If you use another type of tomato the simmering time might differ as the liquid content will differ. Just simmer the tomatoes until you have a nice thick, marinara-type sauce. The sauce can be made ahead of time and stored in the refrigerator until you are ready to put it all together."

Step by Step Method

Step 1

Pour the oil into a skillet over medium-high heat; add onions, and cook until translucent.

Step 2

Add garlic, dried basil, and oregano, and cook for another minute.

Step 3

Add tomatoes, basil seasoning paste, sugar, salt, and pepper and cook until the tomatoes break into a thick sauce, about 8 to 10 minutes.

Step 4

Add the wine and cook for another 2 minutes.

Step 5

Preheat oven to 375 degrees Fahrenheit.

Step 6

Spoon 2 to 3 tablespoons of the sauce in the middle of a serving vessel, shape the goat cheese into a circle, and place it over the sauce.

Step 7

Pour the remaining sauce around the goat cheese, sprinkle the kosher salt over the goat cheese and sauce, and bake for about 15 minutes, or until the goat cheese has softened and is warmed through.

Step 8

Remove from oven, let sit for 5 minutes, and garnish with chopped parsley if using.

Step 9

Serve with baguette slices or crackers.
