Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1/2 cup diced yellow onion
  • 2 clove garlic, processed through a garlic press
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 12 ounces fresh vine-ripened tomatoes, diced (2 tomatoes)
  • 2 teaspoons basil seasoning paste
  • 3/4 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/8 teaspoon fresh ground pepper
  • 2 tablespoons dry red wine
  • 4 ounces goat cheese
  • 1/4 teaspoon kosher salt
  • 1 teaspoon chopped parsley or basil (optional for garnish)

How to Make

  • Step 1: Pour the oil into a skillet over medium-high heat; add onions, and cook until translucent.

  • Step 2: Add garlic, dried basil, and oregano, and cook for another minute.

  • Step 3: Add tomatoes, basil seasoning paste, sugar, salt, and pepper and cook until the tomatoes break into a thick sauce, about 8 to 10 minutes.

  • Step 4: Add the wine and cook for another 2 minutes.

  • Step 5: Preheat oven to 375 degrees Fahrenheit.

  • Step 6: Spoon 2 to 3 tablespoons of the sauce in the middle of a serving vessel, shape the goat cheese into a circle, and place it over the sauce.

  • Step 7: Pour the remaining sauce around the goat cheese, sprinkle the kosher salt over the goat cheese and sauce, and bake for about 15 minutes, or until the goat cheese has softened and is warmed through.

  • Step 8: Remove from oven, let sit for 5 minutes, and garnish with chopped parsley or basil, if using.

  • Step 9: Serve with baguette slices or crackers.

  • Step 10: Enjoy!
