Step by Step Method
Step 1
Preheat the oven to 400°F (200°C).
Step 2
Arrange the zucchini halves cut sides up in an ovenproof dish large enough to hold them in a single layer. Lightly brush with the olive oil, then season with the salt and pepper.
Step 3
Mix together, the Parmesan cheese and garlic together, then sprinkle over the zucchini.
Step 4
Bake for about 15 minutes, or until the zucchini are tender and the cheese is browned.
Step 5
Set oven to broil. Sprinkle tops with just a little shredded mozzarella cheese. Broil until melted, just about 2-3 minutes. Serve.
