Ingredients

The ingredients are:
  • 4 small (600 grams) zucchini (washed and halved lengthwise, the exact weight really does not have to be 600 grams as long as it's not huge zucchini)
  • Olive oil
  • Salt and freshly ground black pepper
  • 1/2 cup freshly grated Parmesan cheese (depending on the size of zucchini you can use more cheese)
  • 2 garlic cloves, (very finely minced)
  • Shredded mozzarella cheese

How to Make

  • Step 1: Preheat the oven to 400°F (200°C).

  • Step 2: Arrange the zucchini halves cut sides up in an ovenproof dish large enough to hold them in a single layer. Lightly brush with the olive oil, then season with the salt and pepper.

  • Step 3: Mix together, the Parmesan cheese and garlic together, then sprinkle over the zucchini.

  • Step 4: Bake for about 15 minutes, or until the zucchini are tender and the cheese is browned.

  • Step 5: Set oven to broil. Sprinkle tops with just a little shredded mozzarella cheese. Broil until melted, just about 2-3 minutes. Serve.
