"I am anything but a vegetarian but I love this recipe! It uses Mexican flavoured vegetarian meatless hamburger (I like Yves Mexi grounf round) It is fun to put everything on the table and let everyone build their own tostados. You can use those stand alone taco shells if you wish. I like to heat my shells but watch they burn very easily. One of these is enough if you are not a big eater but I like to allow two per person. Sour cream is lovely on top with the avacado or I use 2% cottage cheese whipped. N.B. Because the vegetarian Mexi hamburger is not included in the nutritional inventory the nutritional analysis really wrong"

Step 1

Over medium heat fry the garlic and peppers in the olive oil for about 3 minutes

Step 2

Add drained beans, mash them,mixing in the peppers and garlic. Add a bit of the reserved bean juice so you have a nice consistency

Step 3

Heat the vegetarian hamburger over medium heat stirring frequently

Step 4

When the beans are ready and the hamburger is heated through assemble your tostados

Step 5

Add 5 tablespoons of beans to the bottom of the shell, then 5 tablespoons of burger, next lettuce, tomatoes, then cheese and last salsa

Step 6

If using top with avacado and sour cream Enjoy
