"I found this little gem on the net when I was searching for a blue cheese sauce to to drizzle over grilled steaks, it also can be used for pork, chicken, fish or pasta. Just two ingredients, so easy, so good! You do need to use really heavy cream, light cream just won`t work the sauce will be thin, a mistake I made when I tried making it the first time, this will only serve two, double if you want more. I think this could be made the same way using gorgonzola cheese instead of blue cheese, I have not though tried it as yet."

Step by Step Method
Step 1
Heat the cream over medium-low heat in a pan to a very light boil. As soon as the cream starts to boil immediately remove the pan from heat. Turn off the heat.
Step 2
Place the pan back on the burner then crumble the blue cheese into the hot cream and let it melt slowly while stirring with a wooden spoon.
Step 3
When the sauce is smooth, serve immediately.
