Step 1: Heat the cream over medium-low heat in a pan to a very light boil. As soon as the cream starts to boil immediately remove the pan from heat. Turn off the heat.
Step 2: Place the pan back on the burner then crumble the blue cheese into the hot cream and let it melt slowly while stirring with a wooden spoon.
Step 3: When the sauce is smooth, serve immediately.
