Step by Step Method

Step 1

In a saucepan over medium-high heat, combine oil and butter. Once butter has melted, saute shallots until softened but not browned (2-3 minutes).

Step 2

Add the garlic and cook for 30 seconds. Add the mascarpone cheese and cook gently, stirring constantly until melted (2-3 minutes). Do not let the mixture boil.

Step 3

Stir in the parmesan cheese, walnuts and parsley. Season with salt and pepper.

Step 4

Toss with cooked pasta and serve immediately.

Easy recipe, cheated and added a bit of porchetta which worked nicely for those who like it a little more hearty. I loved the walnuts which softened a bit in the heat and added more texture to the dish. I plan to do it again, love pasta recipes with mascopone for a change.

WOW what a great pasta dish. I scaled back for 1 serve but could not get through a full serve so heated up the left overs the next day and added some extra parsley, crumbled walnuts and parmesan cheese to it and heated it in the microwave and enjoyed it both at dinner and lunch the next day, thank you celticevergreen, made for Alphabet Soup tag game.
