Step 1: In a saucepan over medium-high heat, combine oil and butter. Once butter has melted, saute shallots until softened but not browned (2-3 minutes).
Step 2: Add the garlic and cook for 30 seconds. Add the mascarpone cheese and cook gently, stirring constantly until melted (2-3 minutes). Do not let the mixture boil.
Step 3: Stir in the parmesan cheese, walnuts and parsley. Season with salt and pepper.
Step 4: Toss with cooked pasta and serve immediately.
