Ingredients

The ingredients are:
  • 1 pound cooked pasta (spaghetti, linguine, etc)
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 2 shallots (finely chopped)
  • 1 large garlic clove (finely chopped)
  • 1 2/3 cups mascarpone cheese
  • 3 tablespoons grated parmesan cheese (freshly grated)
  • 1 1/4 cups walnuts (chopped coarsely)
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper, to taste

How to Make

  • Step 1: In a saucepan over medium-high heat, combine oil and butter. Once butter has melted, saute shallots until softened but not browned (2-3 minutes).

  • Step 2: Add the garlic and cook for 30 seconds. Add the mascarpone cheese and cook gently, stirring constantly until melted (2-3 minutes). Do not let the mixture boil.

  • Step 3: Stir in the parmesan cheese, walnuts and parsley. Season with salt and pepper.

  • Step 4: Toss with cooked pasta and serve immediately.
