Step by Step Method
TO MAKE THE CHILLI SAUCE
Step 1
Cut the red chillies and soak them in water for about two hours.
Step 2
Cut up into small pieces and soak in the vinegar for one to two hours.
Step 3
Put all the ingredients in a mixer and grind to a smooth paste.
TO MAKE THE MOMOS & FILLINGS (refer to Note below)
Step 4
In a bowl mix all the ingredients of the chicken or vegetable filling, according to your choice. Set aside.
Step 5
Knead the refined flour, baking powder and salt together into firm dough. Cover and keep aside for 30 minutes.
Step 6
Roll the dough into very thin 4-5 inch rounds. Take each round piece and place some filling in the center.
Step 7
Bring the edges together and twist to seal it.Steam in a steamer for about 10 minutes and serve hot with chilly sauce.
NOTE: If you want to skip making the momo wrapper, you may use round dumpling or gyoza wrappers (about 3 1/4 inches wide)
