Ingredients

The ingredients are:
  • 120 grams all-purpose flour (refined)
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt water - for kneading
  • FOR CHICKEN FILLING
  • 125 grams chicken, minced (1 cup)
  • 1/2 cup yellow onions, chopped (finely chopped)
  • 4 tablespoons minced cilantro stems
  • 1/2 teaspoon ginger root, minced (fresh)
  • 1/4 teaspoon black pepper powder
  • 1 tablespoon oil
  • 1/2 teaspoon garlic paste
  • 1/2 teaspoon soy sauce
  • Salt, to taste
  • 1/4 teaspoon vinegar
  • FOR VEGETARIAN FILLING
  • 1/2 cup cabbage, grated
  • 1/2 cup carrots, grated
  • 2 tablespoons yellow onions chopped (chopped fine)
  • 1/2 teaspoon garlic, chopped (chopped fine)
  • 1 tablespoon oil
  • 1/4 teaspoon vinegar
  • 1/2 teaspoon soy sauce
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon cornflour
  • FOR CHILLI SAUCE
  • 25 grams garlic, peeled
  • 6 grams red chillies (whole chillies)
  • 3 tablespoon vinegar
  • 1 tablespoon oil
  • Salt, to taste
  • Sugar, to taste

How to Make

  • TO MAKE THE CHILLI SAUCE

  • Step 1: Cut the red chillies and soak them in water for about two hours.

  • Step 2: Cut up into small pieces and soak in the vinegar for one to two hours.

  • Step 3: Put all the ingredients in a mixer and grind to a smooth paste.

  • TO MAKE THE MOMOS & FILLINGS (refer to Note below)

  • Step 4: In a bowl mix all the ingredients of the chicken or vegetable filling, according to your choice. Set aside.

  • Step 5: Knead the refined flour, baking powder and salt together into firm dough. Cover and keep aside for 30 minutes.

  • Step 6: Roll the dough into very thin 4-5 inch rounds. Take each round piece and place some filling in the center.

  • Step 7: Bring the edges together and twist to seal it.Steam in a steamer for about 10 minutes and serve hot with chilly sauce.

  • NOTE: If you want to skip making the momo wrapper, you may use round dumpling or gyoza wrappers (about 3 1/4 inches wide)
