"I'm not normally a fan of oven barbecue chicken, but since making this particular recipe I have changed my mind. It is scrumptious and you would never guess that it's lowfat. Better yet, if you skin your chicken either the night before or earlier in the day it's quick and easy for a weeknight meal! I've changed the recipe slightly from it's original form to satisfy our tastes. Pares great with potato salad, pasta salad, or a side of beans. Yum! Step by Step Method

Step 1

Trim off any visible fat from chicken. Arrange thighs in a single layer in a 9 x 13-inch baking dish. Set aside.

Step 2

IN a medium bowl, whisk together ketchup, salsa, honey, Dijon mustard, chili powder, and cumin until well blended. Pour sauce over chicken. Turn pieces to coat both sides with sauce.

Step 3

Bake, uncovered, at 400-degrees F for 45 minutes. When chicken is done, arrange thighs on a serving platter and keep warm.

Step 4

Pour sauce into a small saucepan, skimming off as much fat as possible.

Step 5

In a small bowl, mix cornstarch with 1 tablespoon water until smooth. Add sauce. Bring to a boil, and cook until sauce thickens, stirring constantly. Pour extra sauce over chicken or serve it on the side as a dipping sauce.

Step 6

Hint: Chicken breasts or drumsticks can be used in place of thighs. If using chicken breasts, bake them for 30 minutes instead of 45.

This is a really super tasty recipe. I was a bit heavy with the chili (I love spicy) and cut the recipe back to 4 thighs for the two of us. The sauce was thick enough that I didn't have to use the cornstarch. Do again for sure. So easy & so good!
