"This is a recipe that I am posting for the 2016 Culinary Quest _ Thai/Indonesia leg. This is from from Michelle Van Loon of Gurnee and was featured in my "Taste of Home" magazine."
For sauce, in a microwave-safe bowl, combine the first five ingredients. Cover and microwave on high for 1 minute; stir. Set aside.
Cook fettuccine according to package directions. Meanwhile, in a large skillet, cook chicken in oil over medium heat for 3-5 minutes or until chicken juices run clear. Add red pepper; cook and stir until crisp-tender.
Drain fettuccine; top with chicken mixture and sauce. Sprinkle with cilantro.

Great idea to combine salsa and peanut sauce! I wasn't sure what kind of salsa to use, so I made some fresh tomato salsa. As I don't have a microwave, I didn't microwave the whole mix but just stirred it together and used it cold, which worked pretty well. Will make this again, we really loved this dish!
