Step by Step Method

Step 1

Mix together first 6 ingredients. Add sliced chicken, then coat well.

Step 2

Heat oil in electric skillet to 375 degrees. Deep-fry chicken until lightly browned, 3 minutes or until just cooked. Remove chicken with a slotted spoon. Remove the hot oil from the skillet.

Step 3

Drain pineapple, reserving liquid. Add enough water to the juice to juice to make 1 cup then whisk in 2 tablespoons of cornstarch until very smooth.

Step 4

Combine the pineapple juice mixture with next 4 ingredients in a medium saucepan. Bring mixture to a boil. Stir green pepper and chicken into sauce; cook stirring until thoroughly heated.

Step 5

Serve over rice.

I made this using chicken breast and since I am the only one in the family that likes capsicum I only used a little red and yellow and then added some finely sliced carrot and some broccolini florets and a small can of pineapple chunks and we really loved the sweet and sour sauce, thank you Deanna in Derby, made for Alphabet Soup Game.
