Ingredients

The ingredients are:
  • 3 tablespoons soy sauce
  • 1 tablespoon sherry wine
  • 1 large egg
  • 1/4 teaspoon ground pepper
  • 1 teaspoon garlic powder
  • 1/4 cup cornstarch
  • 1 pound boneless skinless chicken thighs (cut into 1-inch pieces or chicken breasts)
  • Vegetable oil (about 2 cups is good)
  • 1 can (15 ounce) pineapple chunks
  • 2 tablespoons cornstarch
  • 1/2 cup granulated sugar
  • 1/4 cup ketchup
  • 1/4 cup vinegar
  • 1 tablespoon soy sauce
  • 1 medium green pepper, cut into 1-inch pieces
  • Hot cooked rice

How to Make

  • Step 1: Mix together first 6 ingredients. Add sliced chicken, then coat well.

  • Step 2: Heat oil in electric skillet to 375 degrees. Deep-fry chicken until lightly browned, 3 minutes or until just cooked. Remove chicken with a slotted spoon. Remove the hot oil from the skillet.

  • Step 3: Drain pineapple, reserving liquid. Add enough water to the juice to juice to make 1 cup then whisk in 2 tablespoons of cornstarch until very smooth.

  • Step 4: Combine the pineapple juice mixture with next 4 ingredients in a medium saucepan. Bring mixture to a boil. Stir green pepper and chicken into sauce; cook stirring until thoroughly heated.

  • Step 5: Serve over rice.
