Step by Step Method

Step 1

Preheat oven to 375 degrees F.

Step 2

Brown chorizo in a skillet over medium-high heat, about 8 to 10 minutes. Drain and place into a large mixing bowl.

Step 3

Add the cheese, red onion, egg, cream cheese, sour cream, hot sauce, and salt and pepper, to taste.

Step 4

Press into jalapeno halves and assemble on a parchment lined baking sheet.

Step 5

Bake until golden and bubbly, about 20 minutes.

Step 6

Makes 24 jalapeno poppers.

Daily Inspiration

Prepared and cooked these stuffed jalapenos today as an appetizer before dinner. I halved the recipe and used less chorizo as it tends to be very greasy (but good). Otherwise I stayed with the recipe ingredients -- love the smoked gouda which I use often when making pimento cheese.
