Ingredients

The ingredients are:
  • 2 links (1/4 to 1/2 pound) chorizo sausage (Mexican chorizo, casings removed, approximately 1/4 - 1/2 lb)
  • 1/2 pound smoked gouda cheese (shredded)
  • 1/4 cup finely chopped red onions
  • 1 large egg
  • 4 ounces cream cheese (1/2 cup)
  • 3 tablespoons sour cream
  • 1 tablespoon hot sauce (recommended: Frank's Red Hot)
  • Salt and freshly ground black pepper
  • 12 large (175 grams) jalapeno peppers (stemmed, seeded and halved)

How to Make

  • Step 1: Preheat oven to 375 degrees F.

  • Step 2: Brown chorizo in a skillet over medium-high heat, about 8 to 10 minutes. Drain and place into a large mixing bowl.

  • Step 3: Add the cheese, red onion, egg, cream cheese, sour cream, hot sauce, and salt and pepper, to taste.

  • Step 4: Press into jalapeno halves and assemble on a parchment lined baking sheet.

  • Step 5: Bake until golden and bubbly, about 20 minutes.

  • Step 6: Makes 24 jalapeno poppers.
