"This is a hearty brunch or a dinner. It is my stove top adaptation of a Kraft oven casserole. Watch your stovetop heat you just want it medium after you have poured on the eggs and added the chees. If you want the chesse to be golden just slip the pan under the broiler for minute or two after cooking the eggs."

Step by Step Method
Step 1
Crumble the sausage in a large heated lighty oiled skillet, cook 5-7 minutes or until cooked
Step 2
Add mushrooms, peppers, onions and thyme, stir fry for 3 minutes
Step 3
Beat together the eggs, cottage cheese,milk and flour
Step 4
Add whole wheat bread chunks, to the skillet, stir frequently cook 1 minute
Step 5
Pour in the beaten egg mixture
Step 6
Top with shredded cheese
Step 7
Cover and cook over medium heat for apprx 5 minutes or until the eggs have set.
Step 8
Watch that bottom heat so the eggs do not overcook on the bottom
