Ingredients

The ingredients are:
  • 8 ounces sausage meat (Italian sausage hot, or mild if you aren't a spice hound, removed from casings)
  • 4 ounces mushrooms, fresh (sliced)
  • 1/4 cup green bell peppers, chopped
  • 1/4 cup red bell peppers, chopped
  • 1/4 cup onions, chopped
  • 1 1/2 teaspoons fresh thyme, chopped (or 1/2 teaspoon dried thyme)
  • 3 eggs
  • 3 tablespoons cottage cheese (or sour cream)
  • 1/4 cup milk
  • 2 teaspoons flour
  • 2 bread slices, whole wheat (or other grain bread torn into medium chunks)
  • 1/2 cup shredded cheese, Tex Mex

How to Make

  • Step 1: Crumble the sausage in a large heated lighty oiled skillet, cook 5-7 minutes or until cooked

  • Step 2: Add mushrooms, peppers, onions and thyme, stir fry for 3 minutes

  • Step 3: Beat together the eggs, cottage cheese,milk and flour

  • Step 4: Add whole wheat bread chunks, to the skillet, stir frequently cook 1 minute

  • Step 5: Pour in the beaten egg mixture

  • Step 6: Top with shredded cheese

  • Step 7: Cover and cook over medium heat for apprx 5 minutes or until the eggs have set.

  • Step 8: Watch that bottom heat so the eggs do not overcook on the bottom
