Sun Chips & Cheese Nachos

"This is my daughter's FAVORITE version of nachos. I usually make it with just chips & melted cheese, but I have put leftover taco night toppings on it for a fancier version. You can definitely add more or less cheese, depending on preference. You can use pre-shredded cheese but it melts so much better if you grate it yourself off the block. If you don't want any spice at all, you can sub the Pepper Jack for Monterey Jack (or just use more Cheddar)."

I love Sunchips but never thought of using them for nachos. This easy recipe for a quick snack is tasty. Next time I am going to try the Garden Salsa flavor, my favorite.
