Step by Step Method

Step 1

Cut a slit in the chicken breast on the long side, layer the ham in, then the cheese slice, a sprinkle of spring onion and then a sprinkle of dried herbs, then pull the top part over to fully enclose the filling and repeat with the other 3 breasts.

Step 2

To crumb put the flour in one shallow bowl, the egg with the milk in another and finally the crumbs in a 3rd bowl; put a chicken breast in the flour and coat and then dip in the egg and then cover with breadcrumbs and put on a plate, repeat with other 3 breasts and then put in the fridge for 30 or so minutes.

Step 3

Line a baking tray with two layers of kitchen paper and preheat oven to 150C.

Step 4

Put a layer of oil in your frypan/skillet on a medium high heat and sear the chicken breasts till golden brown and then put on the tray.

Step 5

Put in the oven for 30 minutes or until cooked through.

10 stars! Delicious and easy and I loved that I didn't have to pound them out and roll them. I made a couple of changes-added salt and pepper to flour to season, and tied the breasts closed with string before breading. Will be making this again.

Very easy dish to prepare...I used panko instead of breadcrumbs and topped the chicken with some additional herbs...this is very tasty as written but I can see adding some other ingredients like Karen suggested...made for FYC tag game...

why have I tended to skirt around making dishes like this? So easy!!!! I would never have thought of oven-baking but definitely the way to go. Next time I might add parmesan to the breadcrumbs, or maybe mustard powder. Or maybe spread some Hot English Mustard over the ham before snadwiching. Just ideas, because this is excellent as is. I was very impressed with myself and so was my husband ha ha!!! Super meal thaat I will be making again, thanks for holding my hand while I jumped into new territory, Pat!!! Made for Consideration Tag Game
