Step 1: Cut a slit in the chicken breast on the long side, layer the ham in, then the cheese slice, a sprinkle of spring onion and then a sprinkle of dried herbs, then pull the top part over to fully enclose the filling and repeat with the other 3 breasts.
Step 2: To crumb put the flour in one shallow bowl, the egg with the milk in another and finally the crumbs in a 3rd bowl; put a chicken breast in the flour and coat and then dip in the egg and then cover with breadcrumbs and put on a plate, repeat with other 3 breasts and then put in the fridge for 30 or so minutes.
Step 3: Line a baking tray with two layers of kitchen paper and preheat oven to 150C.
Step 4: Put a layer of oil in your frypan/skillet on a medium high heat and sear the chicken breasts till golden brown and then put on the tray.
Step 5: Put in the oven for 30 minutes or until cooked through.
