Step 1

Mix first 6 ingredients in a small bowl for sauce; whisk cold water and cornstarch together and add to sauce; whisk together. Cut chicken into strips, sprinkle with pepper.

Step 2

Heat wok over medium high heat one minute. Add oil and tilt to coat. Add chicken, stir fry 2 minutes. Add mushrooms, bell pepper and garlic, stir fry until mushrooms are browned at edges, about 3 minutes. Add sauce, cook until sauce is reduced to glaze, about 1 1/2 minutes. Mix in spinach and toss one minute.

I honestly could not wait to review this recipe. You know when you have tasted something and you say Wow. Well for me this recipe is just that - WoW. I followed the recipe exactly (which for me is rare) the end result is just so good. All the ingredients combine to make a wonderful, healthy meal. The one problem was that the recipe was for 4 people and two of us devoured it! It is also a very economical recipe so for me it is a 10 out of 5.
