Step by Step Method

Step 1

Preheat oven to 325 F. Spray a baking tray with nonstick cooking spray.

Step 2

Melt butter in a saucepan, add the shallots and soften for 3-4 minutes.

Step 3

Place the bread in a food processor and reduce to crumbs. Add the softened shallots, Stilton and herbs. Process briefly until well combined.

Step 4

Remove the stems from the mushrooms (save them to add to broth for soup), then press the stuffing lightly into the caps. Place on baking tray and bake for 35 minutes.

Step 5

Serve warm.

Easy to put together & wonderful flavour! I used whole wheat chia bread which gave it a wee bit of crunch. I also weighed the ingredients. Perfect appy! I did find that there was filling left over, which I can use in another recipe. Thanks Mike for sharing! Made for Billboard Recipe Tag.
