Step 1

Melt butter in a saucepan and saute` onion until clear.

Step 2

Add remaining ingredients and simmer over low heat until tomatoes are very tender or to your liking.

Step 3

Serve hot.

I had some extra tomatoes I had to use up in the garden and made these tomatoes. It seems like the more you eat of these, the more you want, or at least that's what happened to me!

Derf "RIP" Forever in our Kitchen

Vergy tasty stewed tomatoes, loaded with flavour. I used white wine and oregano and just 4 large fresh tomaotes. Served them in a separate bowl with our pork loin roast, a lovely accompaniment. I will poach cod fish in the leftovers for supper tomorrow night. We loved them and will make them often during tomato season. I guess Old Tom Jefferson knew what he was doing, a great old recipe that has proved it's worth over time, thanks!
