In a skillet over medium high heat heat the oil.
Sprinkle 1 1/2 teaspoons pickling spice on each side of steak and then sprinkle both sides with salt and pepper.
Add steak to skillet and cook to medium rare (4-5 minutes each side). Transfer to cutting board.
Add mushrooms to skillet; cover and cook until mushrooms are tender, turning occasionally (a few minutes). Transfer to a bowl.
Thinly slice steak on the diagonal.
Arrange 6 bread slices on work surface. Spread with dressing. Layer each with steak, 2 mushroom caps, sauerkraut and cheese. Top with remaining bread slices.
Spray 2 skillet with nonstick cooking spray. Add sandwiches to skillets and place over medium heat. Cover and cook until bottoms are golden (3 minutes). Remove skillet from heat and remove sandwiches. Spray skillet with the cooking spray and turn sandwiches over into the skillet; cover and cook until bottom are golden and cheese melts (a few minutes).

I have never had a restaurant made Rueben sandwich, but if they taste as good as this Steak and Mushroom Rueben I can see why they are so popular! Other then needing to sub the shitakes made as posted. Made a delicious sandwich, freezing the rest of the steak/mushrooms using my new Cabelo Professional vacuum sealer which keeps it as fresh as the day you make it!. Looking forward to another delicious rueben in the weeks to come!
