Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 3 tablespoons pickling spice (ground)
  • 12 ounce beef flank (you can get a 1 1/2 pound flank steak lengthwise to get 12 ounces)
  • 6 ounces shiitake mushrooms (stemmed, 12 mushrooms)
  • 12 slices (12 ounces) rye bread (deli rye bread)
  • 1/4 cup fat-free salad dressing (Thousand Island dressing)
  • 360 grams sauerkraut (drained, from a jar, 1 1/2 cups)
  • 6 ounces gruyere cheese (sliced)

How to Make

  • Step 1: In a skillet over medium high heat heat the oil.

  • Step 2: Sprinkle 1 1/2 teaspoons pickling spice on each side of steak and then sprinkle both sides with salt and pepper.

  • Step 3: Add steak to skillet and cook to medium rare (4-5 minutes each side). Transfer to cutting board.

  • Step 4: Add mushrooms to skillet; cover and cook until mushrooms are tender, turning occasionally (a few minutes). Transfer to a bowl.

  • Step 5: Thinly slice steak on the diagonal.

  • Step 6: Arrange 6 bread slices on work surface. Spread with dressing. Layer each with steak, 2 mushroom caps, sauerkraut and cheese. Top with remaining bread slices.

  • Step 7: Spray 2 skillet with nonstick cooking spray. Add sandwiches to skillets and place over medium heat. Cover and cook until bottoms are golden (3 minutes). Remove skillet from heat and remove sandwiches. Spray skillet with the cooking spray and turn sandwiches over into the skillet; cover and cook until bottom are golden and cheese melts (a few minutes).
