Step by Step Method
Step 1
To prepare the salad ingredients, cut mango into small chunks. Cut mozzarella into small chunks. Cut the peeled avocado into small chunks. Set aside.
Step 2
Place 1/2 cup of the strawberries, oil, honey, and balsamic vinegar in a mini food processor. Process until smooth. Scrape the dressing into a salad bowl and season with the salt and pepper.
Step 3
Add the spinach, mango, and the remaining 1 1/2 cup strawberries to the dressing and toss to mix well.
Step 4
When plating, sprinkle the mozzarella, avocado, and almonds over each serving.
