Ingredients

The ingredients are:
  • 2 cups strawberries, sliced (chilled, divided use)
  • 2 tablespoon olive oil (extra-virgin)
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar (and1 tsp balsamic vinegar, divided use)
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 bag (6 ounces) baby spinach
  • 1 mango (medium ripe mango,, peeled and cut in small chunks)
  • 5 ounces mozzarella cheese (fresh, cut in small chunks)
  • 1 avocado (Hass avocado, peeled and cut in small chunk)
  • 3 tablespoon chopped almonds (toasted)

How to Make

  • Step 1: To prepare the salad ingredients, cut mango into small chunks. Cut mozzarella into small chunks. Cut the peeled avocado into small chunks. Set aside.

  • Step 2: Place 1/2 cup of the strawberries, oil, honey, and balsamic vinegar in a mini food processor. Process until smooth. Scrape the dressing into a salad bowl and season with the salt and pepper.

  • Step 3: Add the spinach, mango, and the remaining 1 1/2 cup strawberries to the dressing and toss to mix well.

  • Step 4: When plating, sprinkle the mozzarella, avocado, and almonds over each serving.
