Step 1

Heat the olive oil over medium heat, in a frypan; add the mushroom, saute until slightly browned about 5 minutes; add the garlic. salt amd pepper, cook and stir 1 minute. Add the tomatoes, cook for 2 minutes; add the spinach, cook and stir for 2 minutes, just until well wilted.

I made this for my daughter and grandson and they both thoroughly enjoyed it. I did have to swap out the tomato and used a red pepper that I sautéed with mushrooms. Will be making this when I get home with the tomato. Thank you for sharing Derf! Made for Billboard Recipe Tag.
