Spinach Cheese Pie



"I was really hungry for spanikopita, but since we can't have carbs the phyllo pastry was right out. This ended up being more like a crustless quiche, but it's really, really tasty."

Step 1

Preheat oven to 350F; grease a 9-inch deep-dish glass pie plate.

Step 2

Beat seasonings into eggs in a large bowl; add remaining ingredients to bowl and mix thoroughly (you may find it easier to use your hands).

Step 3

Spread mixture into prepared pie plate and smooth.

Step 4

Bake 40-45 minutes, until set and just starting to brown.

Step 5

Let stand 5 minutes before cutting and serving.

Oh my goodness this was so good, we loved every bite! I used lower-fat mozzarella and ricotta just to reduce the fat somewhat. I'm gonna try this with a bottom crust next time, easy to make and even easier to eat, thanks for making our Saturday brunch so delicious!
