Step 1
Preheat oven to 180C.
Step 2
Heat a non-stick frying pan over medium heat and cook the bacon, stirring, for 5 minutes or until crisp and transfer the bacon to a paper lined plate or tray.
Step 3
Grease a 20cm (base measurement) pie dish.
Step 4
Place the filo on a clean work surface and brush 1 filo sheet with a little butter and fold in half crossways and lace in the dish, allowing it to overhang and then repeat with remaining filo and butter turning the overlapping each sheet slightly to line the dish completely.
Step 5
Whisk the egg, cheddar and cream in a just and season and then arrange three-quarters of the bacon and spinach over the filo and then pour over the egg mixture.
Step 6
Top with remaining bacon and spinach and bake for 30 minutes or until golden brown and set.
Step 7
Set aside for 5 minutes to cool slightly and then cut into wedges to serve.
