Ingredients

The ingredients are:
  • 60 grams bacon (2 rashers, rind removed and finely chopped)
  • 8 sheets (106 grams) filo pastry (thawed)
  • 50 grams butter, melted
  • 6 extra-large eggs (lightly whisked)
  • 60 grams shredded cheddar cheese (1/2 cup)
  • 125 ml thickened cream (1/2 cup)
  • 250 grams frozen spinach (thawed and squeezed of excess liquid)

How to Make

  • Step 1: Preheat oven to 180C.

  • Step 2: Heat a non-stick frying pan over medium heat and cook the bacon, stirring, for 5 minutes or until crisp and transfer the bacon to a paper lined plate or tray.

  • Step 3: Grease a 20cm (base measurement) pie dish.

  • Step 4: Place the filo on a clean work surface and brush 1 filo sheet with a little butter and fold in half crossways and lace in the dish, allowing it to overhang and then repeat with remaining filo and butter turning the overlapping each sheet slightly to line the dish completely.

  • Step 5: Whisk the egg, cheddar and cream in a just and season and then arrange three-quarters of the bacon and spinach over the filo and then pour over the egg mixture.

  • Step 6: Top with remaining bacon and spinach and bake for 30 minutes or until golden brown and set.

  • Step 7: Set aside for 5 minutes to cool slightly and then cut into wedges to serve.
