Step by Step Method

Step 1

Blanch tomatoes and skin them, or just use canned tomatoes.

Step 2

Cook bacon; take out; saute onions and red peppers in bacon grease.

Step 3

Add paprika and tomatoes, garlic, oregano and cumin; fry gently.

Step 4

Add chicken stock.

Step 5

Return bacon and bring to a boil.

Step 6

Simmer 1 hour, stirring.

We REALLY liked this tomato soup. I wish I had used canned tomatoes instead of fresh because my fresh tomatoes didn't taste like much! So I added a couple tablespoons of tomato paste and it was perfect. Loved the bacon -- it was subtle and not overpowering. We enjoyed with grilled cheese sandwiches and it was an amazing lunch on a rainy afternoon! Made for the AmaZ'ing Race 2023 (Barcelona, Spain).

We love this tomato soup version because it's chunky and the flavorful. I used a 28 oz. can of diced tomatoes and Spanish paprika for a smoky flavor. We enjoyed this for a lunch on a rainy day. Thanks!
