I loved that instead of cheese, there was the cooked mixture of onions, tomatoes, and mushrooms. So yummy. Then, top that mixture with bacon? Yes! This made 2 huge omelets.

I made this as per recipe for one serve but would suggest that you make sure your filling is well cooked and is fairly dry as mine was still a little wet and the egg broke up a little and I forgot to put the bacon on so served in on the top which hid the bit of egg which broke up and didn't flip properly but it was a very delicious and filling breakfast and the touch of cayenne added I nice bite but I may have been a little more generous than the recipe called for on that but that's the way I like it. Thank you Dee made for For Your Consideration tag game at FF&F.
