"This recipe is lovely for a hearty breakfast, brunch, lunch or even for dinner. It will feed two very hungry people or four with lighter appetites. Use whatever smoked sausage is your favorite. Add some chopped peppers if you like. Serve with some chili sauce or ketchup. It is nice on toast or an english muffin."

Step by Step Method

Step 1

Whip together the eggs, milk, sour cream, cajun spice & flour. Set aside.

Step 2

Lightly oil a skillet.

Step 3

Over medium high heat fry the sausage, garlic, onions & mushrooms for about 5 minutes, stirring them a few times.

Step 4

Pour in the eggs..Fold over the eggs as they cook on the bottom.

Step 5

Continue folding until the eggs are cooked.

Step 6

Season with salt & Pepper.
