Step 1
Whip together the eggs, milk, sour cream, cajun spice & flour. Set aside.
Step 2
Lightly oil a skillet.
Step 3
Over medium high heat fry the sausage, garlic, onions & mushrooms for about 5 minutes, stirring them a few times.
Step 4
Pour in the eggs..Fold over the eggs as they cook on the bottom.
Step 5
Continue folding until the eggs are cooked.
Step 6
Season with salt & Pepper.
