Ingredients

The ingredients are:
  • 4 large eggs
  • 1/4 cup milk
  • 3 tablespoons sour cream (or 2% cottage cheese)
  • 2 tablespoons all-purpose flour
  • 175 grams smoked sausage (sliced 1/4 inch pieces)
  • 2 garlic cloves (chopped)
  • 1 teaspoon Cajun spice
  • 1/4 cup chopped yellow onion
  • 1/2 cup sliced fresh mushrooms
  • Salt & Pepper, to taste

How to Make

  • Step 1: Whip together the eggs, milk, sour cream, cajun spice & flour. Set aside.

  • Step 2: Lightly oil a skillet.

  • Step 3: Over medium high heat fry the sausage, garlic, onions & mushrooms for about 5 minutes, stirring them a few times.

  • Step 4: Pour in the eggs..Fold over the eggs as they cook on the bottom.

  • Step 5: Continue folding until the eggs are cooked.

  • Step 6: Season with salt & Pepper.
