Step by Step Method
Step 1
Place the chicken in a large re-sealable freezer bag.
Step 2
Add 1 cup beer, salt, brown sugar and garlic powder to the bag and swish together; marinate in the refrigerator overnight.
Step 3
Remove the chicken from marinade and rinse well.
Step 4
Pat dry and set aside.
Step 5
Mix together 1/4 cup BBQ sauce and 2 tablespoons beer and slather over chicken pieces (I toss all this together in a plastic bag).
Step 6
Place the chicken pieces in the smoker and smoke for 2 1/2 hours at 250 degrees Fahrenheit.
Step 7
Take the chicken out of the smoker and brush with 2 tablespoons BBQ sauce.
